Ingredients Needed:
- 1 cup confectioners’ sugar
- ¾ cup canned pumpkin
- 4 ounces of mascarpone cheese
- ½ cup ricotta cheese
- ¼ cup instant vanilla pudding mix
- 1 tsp pumpkin pie spice
- ½ cup heavy whipping cream
- 12 large cannoli shells
- 1 tbsp chocolate chips
- 1 tsp confectioners’ sugar for dusting
Directions:
- In a large bowl mix 1 cup confectioners’ sugar, canned pumpkin, mascarpone cheese, ricotta cheese, vanilla pudding mix, and pumpkin pie spice.
- Beat whipping cream in a bowl until stiff peaks are formed, then fold into the pumpkin mixture. Put pumpkin mixture into a resealable plastic bag and cut a ¾ inch hole in one corner. Pipe mixture into each cannoli shell. Garnish the ends with chocolate chips and garnish the top with confectioners’ sugar.
