Ingredients:
- 5 eggs beaten
- 2 cups sugar (for healthy substitution decrease sugar to 1 cup- the applesauce adds sweetness)
- 1 1/2 cups oil (for healthy substitution use 3/4 cup oil and 3/4 cup unsweetened applesauce)
- 2 cups of pumpkin
- 2 cups flour (for healthy substitution use 2 cups whole wheat pastry flour instead of regular flour)
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp nutmeg
- 1 tsp cinnamon
- 2 packages instant coconut pudding
Directions:
- Preheat the oven to 350 degrees F.
- Beat the eggs just until yolks are broken and blended.
- Add remaining ingredients and mix well.
- Spray muffin tins with nonstick cooking spray.
- Divide the batter evenly into the muffin tins.
- Bake for 15-20 minutes.
- Muffins are done when they are golden brown on top and toothpick inserted comes out clean.
