Pumpkin Cheesecake Bars: a fall treat for destressing

Times are tough right now. With first quarter ending, college admissions starting, and tests almost every other day of the week, there needs to be some time to relax. However, this is a great recipe for a delicious dessert to take your mind off of these stressful tasks. Here is the super easy recipe for Pumpkin Cheesecake Bars with Cream Cheese Frosting!

Bar Ingredients

  • 4 eggs
  • 1 and 2/3 white sugar
  • 1 cup vegetable oil
  • A can of pumpkin
  • 2 cups white flour
  • 2 teaspoons baking powder
  • A pinch of salt
  • 1 teaspoon baking soda

Frosting Ingredients

  • 1 package of cream cheese
  • 1/2 cups of butter
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Bars

  1. Preheat the oven to 300℉
  2. Mix eggs, sugar, oil and pumpkin until whipped properly
  3. Add the rest of the ingredients while still mixing with a whisk or electric mixer at low speed
  4. Grease a 13×10 inch baking pan and add batter evenly throughout the pan
  5. Bake for 30 minutes
  6. Before frosting, make sure bars are completely cooled off

Icing

  1. Soften butter, but not melt it and combine softened butter and cream cheese with electric mixer until smooth
  2. Add powdered sugar at low speed so powdered sugar doesn’t fly everywhere. Stir in vanilla with a spoon and then ice the bars
